"RETURN TIMES"
The
buildings have been re-constructed with the same tools and methods used
by our ancestors, from the corn-husk mattresses to the stable for
keeping animals, and wells used for collecting rainwater. As well as
setting up a company which produces and markets local produce, the
current development initiative covers the transformation, cultivation,
preservation and transport of the products, using ancient local
farming methods which preserve and revive the culture of our
ancestors. We are, therefore, restoring buildings, wells, drystone
walls and mule tracks which closely resemble those
from around 150 years ago, when the area was home to several fimilies
whose survival depended on the practices.

"WINE GROWN ON THE ROCK "
ROCCESE:
The name of this particular wine comes from the way it is cultivated.
The ancinent Ligurian method involved the placing of the plants in the
small area of land that had been obtained from among the rocks or
within the dry walls. All the plants used for the production of Roccese
are, without exception, native to the area: we do not mean the
simple grafting of a local vine, but rather the subsequent
cultivation and conservation of the product. In that way the vine is
fed with organic fertilisers, trated with natural substances and, to
avoid any kind of watering, the plants are hoed by hand so that they
are able to benefit from the transpiration of the soil at night
and also root themselves deeply into the rocks .

"THE SCENTS AND COLORS OF OUR PRODUCTS"
Our
work not only concentrates on producing plants but is particulary
devoted to ensuring that the whole company operates as a unit of
officinal plants and qild flowers, such as thyme, mint, rue, rosemary,
Lentiscus, Aleppo pine, oregano, wild fennel, bearberry and broom.
All of these plants are to be found amidst the vines and olive
trees, as well as on the rocks and dry-stone walls.
In
addition to the production of oil and wine, the wild lavender found
locally is also worth mentioning. In the '30's, '40's and '50's its
essence was extracted by the "ALAMBICCO" company and became very
popular for use in perfumes. We plan to recreate each manufacturing
stage from plantation to production. In the ancient
